Jerome Rioux, a native of Thonon les bains, a small French village in the heart of the Alps, began his career by studying cooking at the Bonneville hotel school in Haute Savoie. He studied cooking for two years, alternating with an internship in one of the Michelin-starred restaurants near Lake Geneva, where he learned to deal with all kinds of gourmet products such as cheeses, game, freshwater fish, etc.
When he became curious about Mediterranean cuisine, he came straight to Valencia in search of experience and new knowledge. Gradually he developed his career until he arrived at the Sabbia by Gabbeach family.
His cuisine mixes the tradition of classic Mediterranean gastronomy with a personal and elaborate touch. He always tries to find a good local product, giving it a relatively simple preparation to transmit the most faithful flavour of the raw material.
